PROCESSING PROCESS FOR "ORODIAMALFI" LIMONCELLO
Using exclusively PGI Amalfi Coast lemons, OrodiAmalfi creates this nectar of the dei with a careful selection of the best lemons harvested by hand in the splendid terraced citrus groves of the Divina Costiera.
The lemons, once washed, are sent for mechanical peeling, taking care to remove, as far as possible, only the flavedo (the yellow and fragrant part of the peel).
The production of the infusion takes place through the maceration of the peels in ethyl alcohol for a time of not less than 48 hours (aromatic transfer).
The infusion obtained is then subjected to appropriate filtrations.
The liqueur is therefore obtained by mixing the sugary syrup, previously prepared separately, with the infusion of zest of IGP Costa d'Amalfi lemons.
The next step will be the bottling and packaging automated.
OrodiAmalfi limoncello does not contain allergens, as indicated in Annex II of EC Regulation no. 1169/2011 concerning the provision of information on food to the consumer.
In compliance with the EC Regulations 1829/2003 and 1830/2003, OrodiAmalfi limoncello does not contain the presence of genetically modified ingredients.
Intense yellow in color with shades of bright green, OrodiAmalfi limoncello releases a series of aromas that evoke the different nuances of the fresh, freshly picked SFUSATO AMALFITAN PGI Amalfi Coast lemon.
OrodiAmalfi limoncello is produced without any use of natural colorings or flavourings.
Although it does not undergo chemical alterations over time, in order to better enhance the organoleptic characteristics of the product, it is advisable to consume it fresh.
The liqueur must be kept away from heat sources and sheltered from light, and in optimal storage conditions, its shelf-life is at least 12 months.
The natural opalescence of the product transforms into clarity over time.
Any emergence of outcrops of vegetable nature (essential oils of lemon) is a consequence of the total naturalness of the product.
