PROCESSING OF THE
ANNURCA APPLE LIQUOR "ORODIAMALFI"
From the manufacturing process of the annurca apple, the queen of apples, grown exclusively in Campania (southern Italy), OrodiAmalfi produces this liqueur with a pleasant sour taste and fruity flavour.
The annurca apples, once washed and dried, are sent for mechanical peeling, taking care to remove, as far as possible, only the skins.
The infusion is produced by macerating the skins in ethyl alcohol for no less than 48 hours (aromatic release).</p >
The infusion obtained is then subjected to appropriate filtrations.
The liqueur is therefore obtained by mixing the sugary syrup, previously prepared separately, with the infusion of peels of Annurca apple.
The next step will be bottling and automated packaging.
The OrodiAmalfi annurca apple liqueur does not contain allergens, as indicated in Annex II of EC Regulation no. 1169/2011 concerning the provision of information on food to the consumer.
In compliance with the provisions of EC Regulations 1829/2003 and 1830/2003, the OrodiAmalfi Annurca apple liqueur does not contain the presence of genetically modified ingredients.
Slightly cloudy in color, the OrodiAmalfi Annurca apple liqueur is characterized by the sour taste of the fruit and enhances its delicate but intense aromas.
Although it does not undergo chemical alterations over time, in order to better enhance the organoleptic characteristics of the product, it is advisable to consume it fresh.
The liqueur should be kept away from heat sources and protected from light, and in optimal storage conditions, its shelf-life is at least 12 months.
